🔥This delicious Wood-Fired Basque-Burnt Cheesecake is almost impossible to mess up! This has to be among the quickest and most delicious cheesecakes you’ll ever make. 30 min from start to finish! Easy to make in your wood-fired pizza oven or @Oonihq Karu 16. Ingredients: -16 oz full-fat cream cheese, softened (500 g) -2⁄3 cup (150g) granulated sugar -1 teaspoon vanilla extract -1⁄4 teaspoon salt -2 large eggs room temperature -1 cup (250g) heavy cream -2 Tbs. (15 g) all-purpose flour (sifted) INSTRUCTIONS: Fire up your Ooni pizza oven. Aim for 500F/260C on the baking stone. For best results, use an infrared thermometer to check the temperature of the middle of the stone. 1. Line the inside of a 8" round spring pan or cake pan with two layers of parchment paper. Leave a bit of extra parchment paper sticking out of the top and trim the rest down. 2. In a large mixing bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and salt. Use an electric hand mixer to blend until the sugar dissolves completely. 3. Add in the eggs, one by one, beating well in between. Then add the heavy cream and blend. 4. Add the flour, bit by bit, mixing well to combine. 5. Pour into the prepared baking pan. Place into the preheated oven and bake for 20 minutes, until the top is very dark but the cheesecake is still very jiggly, or the very center registers 155F or 68C. 6. Remove the burnt cheesecake from the oven and let cool to room temperature for at least two hours. 7. Enjoy! I know it’s not pizza! 😉 Hope you don’t mind.
