Ingredients 2 cups of rotisserie chicken (shredded) 1 block of cream cheese 1/2 cup of hot sauce 3/4 cup of Treasure Cave Blue Cheese Crumbles 1⁄2 cup of Shredded Cheese 24 mini corn tortillas 1 teaspoon Harrisa or Paprika (optional) 1 teaspoon garlic powder 1 teaspoon onion salt 1 teaspoon Fresh ground black pepper Green onions for garnish Treasure Cave Blue Cheese Crumbles for garnish Cooking Instructions In a large mix bowl, combine shredded chicken, cream cheese, Treasure Cave Blue Cheese Crumbles, hot sauce and seasonings. Mix well until everything is combined. Fun fact: Using corn tortillas makes taquitos. Flour tortillas make flautas. Wrap corn tortillas in a damp paper towel and place them in the microwave for 30 seconds. You can also warm them up individually on the stove top on medium-low heat for 10 seconds on each side. This will allow the tortillas to be more pliable and will help in preventing the tortillas from cracking or breaking when filling them. Spoon about 2 teaspoons of the chicken mixture into a line at one end of a tortilla and tightly roll it up. Now don’t forget to use a toothpick to secure it. I don’t want the filling to spill out and ruin your day. Place a large non-stick skillet on medium-high heat. Fill the skillet with 1 cup of cooking oil or until 1⁄4 way fill, you want to shallow fry your taquitos. When the oil is hot, place the tortillas into the hot oil. The tortillas should dance in the oil, I mean sizzle in the oil! Carefully fry the taquitos for 2-3 minutes on each side. Make sure to fry them in small batches, to prevent overcrowding the pan. The taquitos will be golden brown on all sides. Drain them on a paper towel and immediately transfer them to a serving plate. Serve with shredded lettuce and tomato and my famous blacken blue cheese dip for added funkiness.
