Autumn aromas - grouse sausages catching a kiss of applewood smoke.
Isaac says, "The butcher thought I was crazy when I first asked him for grouse that I was going to mince, and add to a sausage, 14 years ago. 'Are you sure son?' But they taste amazing, and the venison and pork in the mix tame the strong wild flavours of the grouse."
We grill the sausages in the kitchen then bring a little of the smoke to you at the table using our special stone grill bowls.
