This is my favorite Spicy Caesar Salad that I know you’ll want to make for your own:
DRESSING:
2 large egg yolks
2 tablespoons sour cream
2 cloves garlic, minced
2 oil-packed anchovy fillets
2 tablespoons freshly squeezed lemon juice
1 tablespoon Worcestershire
1⁄4 cup extra-virgin olive oil
1⁄2 cup avocado oil
1-2 serrano peppers
BREAD CRUMBS:
4 Tablespoons butter
1 cup breadcrumbs
1/2 tsp garlic powder
CROUTONS:
2 cups cubed fresh sourdough bread
Salt to taste
SALAD:
1 large romaine head, chopped
Fresh grated Parmesan
Grilled chicken breast
-In a small blender, pulse together all of the dressing ingredients until well combined. Thin with water, if needed. Set aside.
-Toast the bread crumbs in a saucepan in butter and garlic powder. Set aside.
-Toast the bread crumbs in the same saucepan until lightly crispy.
-Assemble the salad by combining the lettuce, dressing, croutons, and Parmesan and toss together well.
Top with grilled chicken and enjoy with a cold glass of wine. #chateaustemichelle #embracethelight
