this rosemary sheet pan chicken & veg is a good one to have in your weeknight meal arsenal 🤤 tbh I usually like to cook in bulk so I’ll do three sheet pans - one with veg, one with potatoes, one with proteins! a combo pan is nice when you’re just cooking one meal though 👌🏼 - 2 large chicken breasts @pasturebird - 1/2 medium bag whole carrots - 1/2 bag golden mini potatoes - olive oil @freshpressfarms - salt - pepper - fresh rosemary preheat oven to 350F scrub potatoes and carrots clean; peel carrots and cut at a diagonal into wedges; cut larger potatoes into halves (more uniform size will cook faster/ be done at same time) coat potatoes and carrots in 1 tbsp olive oil each, a few shakes of salt and pepper, and a sprinkle of fresh rosemary (washed); add to pan cut chicken breasts in half thickness-wise so you have 4 thinner chicken breasts; toss with a little olive oil, salt, pepper, and rosemary as well and add to pan bake 20 minutes and check chicken with food thermometer at thickest part. when chicken reaches 165F internal temp and appears somewhat golden on outside, remove chicken and continue to roast the rest of veggies until soft through with fork and edges appear crispy and brown.
