shaved summer zucchini salad !!!! (so simple + so good) ingredients: zucchini (i usually use 2-3, shaved into strips using a peeler) 1-2 tbsp of vinegar (i used persimmon vinegar) juice of 1x lemon 2 tbsp olive oil sprinkle of sea salt yogurt base — 1/2 cup of greek yogurt or skyr (i used @siggisdairy ) sea salt, fresh herbs (i love to use dill + parsley) marinate your shaved zucchini strips in your lemon marinade in fridge for 2-3 hours. prepare your yogurt base. when ready spread yogurt base on your plate, top with shaved zucchini — can also top with some fresh tomatoes + more herbs xx
