Now live! ⚡Ethiopia Dumerso Limited Oxygen Fermentation⚡️ In the cup we taste marionberry, hibiscus, and apple 😋 The Dumerso washing station is woman-owned and operated by two sisters; CEO, Hirut Berhanu and Station Manager, Mahder Berhanu. The process starts with ripe cherries from smallholder producers. The cherries are sorted by density by placing them into float tanks where the lower density cherries are skimmed off, leaving only the higher density cherries to continue the processing journey. At this point, the skins are removed from the cherries and the cherries are deposited into fermentation tanks. The cherries are then placed into multi-layered plastic bags and stored under a shaded area for an additional fermentation cycle. Over this period, the oxygen levels are limited by the plastic barrier, hence the name Limited Oxygen Fermentation. Following this fermentation cycle, the cherries are laid onto open-air drying tables that are shaded by mesh canopies to let the sun slowly draw out their moisture. Sourced by @catalysttrade
