Ready for a decadent date night dinner in a snap? 🤌 Try @Delaney & Shelby’s Gorgonzola Gnocchi, with a marriage of walnuts, sage, and creamy Treasure Cave gorgonzola cheese. Get cooking with the recipe below! Ingredients: - 24 oz mini gnocchi - 4 garlic cloves, minced - 1/4 c shallot, minced - 1 tbsp sage, chopped - 1.5 c heavy cream - 5 oz Treasure Cave Crumbled Gorgonzola Cheese - 1.5 c spinach, chopped - reserved pasta water - 2/3 c walnuts, chopped - 1 tbsp butter - 1 tbsp honey - 1/4 tsp nutmeg - 1/8 tsp cayenne - salt and pepper, to taste Directions: Add walnuts to a pan on medium heat and toast for 2-3 minutes. Add in the butter, honey, nutmeg, and cayenne and cook for an additional 2-3 minutes, mixing constantly. Pour onto a parchment paper lined plate and set aside. Bring a pot of salted water to a boil. While waiting for the water to boil, prepare the gorgonzola sauce by adding a splash of olive oil to a saucepan on medium heat. Once the oil is hot, add in the garlic, shallot, and a sprinkle of salt and pepper. Cook until shallot is soft (about 2-3 minutes) and add in the sage. Cook until fragrant. Pour in the heavy cream and Treasure Cave Crumbled Gorgonzola Cheese. Mix frequently until the cheese is melted into the sauce. Boil gnocchi for 1 minute and be sure to save pasta water. Add gnocchi, spinach, a splash of pasta water, and 1/2 c of the candied walnuts to the sauce and mix until combined and the sauce thickens slightly. If the sauce is too thick, add more pasta water until the desired consistency is reached. Serve, top with extra candied walnuts, and enjoy!
