braised tofu in dashi. (is this agedashi tofu?) when you see people eating chinese food or pizza on netflix, next thing you do is you are on the delivery app to order food. what happens when it was described in a book set in 1591 japan? i was reading a book about the way of tea and there was a description of this dish that stucked in my head. (it’s really not that important part of the book, but this detailed description made me want to make this dish.) The host cooked this tofu dish for his mentor to make him feel better. the mentor liked the dish and told him that this is an outstanding tofu. the host received the compliment and felt genuinely happy that his tired mentor liked the dish “ i rounded the corners of tofu and cooked in a pot by rolling the tofu. then braised it in dashi for a half day, so hopefully the tofu absorbed all the flavor”. i didn’t have patience to braise for the half of the day nor making tofu in to a nice ball shapes that i could roll in a pan, but i did use best momen tofu around, from @meijitofu. cubed, then rolled in fine mesh draining bowl to make tofu round-ish. then cooked in avocado oil and braised in dashi with a little bit of kaeshi added asatsuki from @yasutomifarms to serve. it came out as comforting as the mentor prob felt that night. #japanesecuisine #tofu #vegetarian #chanoyu #sennorikyu #furutaoribe #利休にたずねよ
