WE’RE AT THE END of October and breast cancer awareness month and I hope that I’ve been able to share a little awareness of symptoms, risks and what do you can do help reduce your risk via diet and lifestyle. I have plenty more to share. So many of you have asked about what you can eat. We know that the Mediterranean diet pattern is one of the healthiest ways to eat - a diet rich in colourful fruit and vegetables, legumes and beans, healthy fats including nuts, seeds and extra virgin olive oil. Eating 2 portions of dark leafy greens and 1 portion of cruciferous vegetables plus a diet high in calcium can also reduce risk.

Here is a tasty and easy recipe packed with flavour and nutrients., and 4 portions of fruit and vegetables.
2 tbsp olive oil
1 onion, finely sliced
1 clove of garlic, crushed
1 tsp red chilli
1 red pepper, sliced
1 courgette, sliced
100g Cavolo Nero
1/2 pack of @merchantgourmet Tomatoey french lentils or Puy lentils
1 tbsp balsamic vinegar
1 tbsp @thegayfarmer extra virgin olive oil

1️⃣ Preheat the oven to 180C/ 350F/ Gas mark 4.
2️⃣ Arrange the red pepper and courgette on a tray, drizzle with 1 tbsp olive oil and roast for 20 - 25 min.
3️⃣ Meanwhile, heat a pan and sauté the onion in the remaining olive oil. When softened, add the garlic and chilli.
4️⃣ Saute for 2 min and add the Cavil Nero and add 2 tbsp water. Saute for 2 more min.
5️⃣ Add the lentils and cook for a further 2 min until warmed through.
6️⃣ Add the roasted vegetables, and season well.
7️⃣ Transfer to a bowl and add some basil or parsley. Drizzle with the balsamic vinegar and EVOO.
