Ok now I know it has been a while! But the good news is; I brought cake to welcome my new Instagram name @adatewithsam! 🄳 So after many years being sammybeasley1 I thought it was time for a change and what better way to celebrate then with a 4 layered snickers cake decked out with all the toppings including peanut butter ganache, mini raw snickers bars and homemade chocolate bars! ⁣ ⁣ I promise this is a cake you will honestly struggle to not eat for breakfast.. or want to share 😜 Recipe below! ⁣ ⁣ INGREDIENTS⁣ ⁣ Base:⁣ ā–ŖļøŽ1 cup raw walnuts (or almonds)⁣ ā–ŖļøŽ1⁄4 cup cocao powder⁣ ā–ŖļøŽ1⁄4 cup raw cashews⁣ ā–ŖļøŽ1⁄4 cup buckinis⁣ ā–ŖļøŽ12 x medjool dates (soaked/approx. 1 cup)⁣ ā–ŖļøŽPinch salt⁣ ⁣ Cream filling:⁣ ā–ŖļøŽ1 cup raw cashews (soaked 4-6 hours)⁣ ā–ŖļøŽ3⁄4 cup coconut cream (thick part of the can)⁣ ā–ŖļøŽ1⁄4 cup rice malt syrup or maple⁣ ā–ŖļøŽ1 tsp vanilla⁣ ā–ŖļøŽ2 TBS coconut oil, melted⁣ ā–ŖļøŽ1 scoop @macr0mike white chocolate protein. Discount in bio! ⁣ Caramel:⁣ ā–ŖļøŽ1/2 cup coconut milk + extra if needed to blend⁣ ā–ŖļøŽ3/4 cup peanut butter- I used @mmmore_rawtreats⁣ ā–ŖļøŽ1&1/2 cup pitted medjool dates (soaked to soften)⁣ ā–ŖļøŽPinch salt⁣ ā–ŖļøŽ1 tsp maca powder⁣ ā–ŖļøŽ 1⁄2 tsp vanilla extract⁣ ā–ŖļøŽ1/4 tsp fine sea salt⁣ ā–ŖļøŽ1⁄2 cup peanuts (unsalted)⁣ ⁣ Chocolate Topping:⁣ ā–ŖļøŽ200g vegan chocolate⁣ ⁣ METHOD:⁣ 1. Line the bottom of a 20cm round cake tin with baking paper.⁣ ⁣ 2. For the base, process all the ingredients until the mixture starts to come together when pressed. Spread the mixture evenly across your lined tin, then place in the fridge while you make your filling. ⁣ ⁣ 3. Drain your cashews & place all cream filling ingredients into a high-speed blender & blend until smooth. Pour the mixture over the base, even out, then place back into the freezer. ⁣ ⁣ 4. For the caramel, place all the ingredients (except for the peanuts) into a high-speed blender & blend until smooth, scraping down sides of bowl occasionally. Fold through your peanuts & transfer the mixture on top of your vanilla cream layer. Place back in the freezer to set for 1 hour. ⁣ ⁣ 5. Melt the chocolate in a small saucepan on a low heat and pour the chocolate over the caramel layer and place back in the freezer to set for 4 hours. Top generously🤪
