Ok now I know it has been a while! But the good news is; I brought cake to welcome my new Instagram name @adatewithsam! š„³ So after many years being sammybeasley1 I thought it was time for a change and what better way to celebrate then with a 4 layered snickers cake decked out with all the toppings including peanut butter ganache, mini raw snickers bars and homemade chocolate bars! ā£

INGREDIENTSā£
ā£
Base:ā£
āŖļø1 cup raw walnuts (or almonds)ā£
āŖļø1ā4 cup cocao powderā£
āŖļø1ā4 cup raw cashewsā£
āŖļø1ā4 cup buckinisā£
āŖļø12 x medjool dates (soaked/approx. 1 cup)ā£
āŖļøPinch saltā£
ā£
Cream filling:ā£
āŖļø1 cup raw cashews (soaked 4-6 hours)ā£
āŖļø3ā4 cup coconut cream (thick part of the can)ā£
āŖļø1ā4 cup rice malt syrup or mapleā£
āŖļø1 tsp vanillaā£
āŖļø2 TBS coconut oil, meltedā£
āŖļø1 scoop @macr0mike white chocolate protein. Discount in bio!

Caramel:ā£
āŖļø1/2 cup coconut milk + extra if needed to blendā£
āŖļø3/4 cup peanut butter- I used @mmmore_rawtreatsā£
āŖļø1&1/2 cup pitted medjool dates (soaked to soften)ā£
āŖļøPinch saltā£
āŖļø1 tsp maca powderā£
āŖļø 1ā2 tsp vanilla extractā£
āŖļø1/4 tsp fine sea saltā£
āŖļø1ā2 cup peanuts (unsalted)ā£

Chocolate Topping:ā£
āŖļø200g vegan chocolateā£

METHOD:ā£
1. Line the bottom of a 20cm round cake tin with baking paper.ā£
ā£
2. For the base, process all the ingredients until the mixture starts to come together when pressed. Spread the mixture evenly across your lined tin, then place in the fridge while you make your filling. ā£
ā£
3. Drain your cashews & place all cream filling ingredients into a high-speed blender & blend until smooth. Pour the mixture over the base, even out, then place back into the freezer. ā£
ā£
4. For the caramel, place all the ingredients (except for the peanuts) into a high-speed blender & blend until smooth, scraping down sides of bowl occasionally. Fold through your peanuts & transfer the mixture on top of your vanilla cream layer. Place back in the freezer to set for 1 hour. ā£
ā£
5. Melt the chocolate in a small saucepan on a low heat and pour the chocolate over the caramel layer and place back in the freezer to set for 4 hours. Top generouslyš¤Ŗ
