Greeks gyros The kebab series has taken a short trip over to Greece to try and re create the famous greek Gyros or Gyros for us brits There so many elements to this that I will write the full recipes for each bit in the caption Ive sliced up a combination of pork belly and pork shoulder steak then prepared my brine by making sure I dissolved the salt and sugar in boiling water then added more water and let the whole lot chill got my meat in over night and let brined them over night then marinaded them I then started to assemble my gyros by getting the meat on the my spike this is a very important part as how you prep your spike is how good the outcome will be Make sure its layer evenly its squashed down and you’ve cut off the loose pieces Im cooking mine of the bbq and adding apple wood to smoke but the in the oven is fine just make sure the internal temp is reading 65c plus The fundamental issue of cooking any type of kebab at home is that in shops the meat is cook from the outside shaved off then the next layer cooks at home its best to bring to safe temp slices then re fry for crispness BRINE 2tbsp salt 1tbsp sugar 3 bay leaves Spig rosemary X1 lemon MARINADE X2 tbsp honey X2 tbsp white wine vinegar X1 tbsp oregano X1 tbsp crack black pepper X1 tsp salt (remember youve brined) X1 tbsp chilli flakes X2 tbsp olive oil #thekebabseries #kebab #gyros #gyro #greekfood #Cypriotfood #greek #greekstreetfood
