the cashew butter tahini sauce is what makes this, mmMmpf! 🤌🏽💦
sauce:
1/4c cashew butter
1/4c tahini
toasted sesame oil
fish sauce
rice vinegar
low sodium soy sauce
garlic chili paste
mix all ingredients in blender until smooth and set aside.
scramble the eggs, sauté and tenderize the shallot/jalapeño, cook the tofu and shrimp and add all back to pan, off heat, topping with cashew sauce. toss to evenly coat and serve.
top with lots of cilantro, lime and crushed cashews! 🍋🥜🌿
