OK FAM, the are the best things I’ve made yet. All 6 of these Chocolate Chip Muffins gone in less then 30 minutes 😳🤭 They are so yummy, and a great way to switch up your oats for breakfast or a snack! They are made with blended quick oats made into OAT FLOUR. I bet you have all the ingredients in your house already! They take 10 minutes to whip up, and 30 minutes to bake. I wanted to find a recipe without protein powder, butter, oil, sugar and banana, so I did some experimenting and came up with this! I hope you enjoy! 🤎
Dry Ingredients:
*1.5 cup Oat Flour (measure flour once it’s blended)
*1 scoop @1upnutrition Chocolate Collagen Peptides (RANDI20 saves $$)
*1/4 tsp Baking Powder
*Salt
*1/8 cup Dairy Free Chocolate Chips (I used Enjoy Life)
Wet Ingredients:
*1 Egg
*1 tsp Vanilla Extract
*1/2 cup Almond Milk
*1/4 cup Maple Syrup
Topping:
*Cut up 1 or 2 squares of your favourite chocolate bar (I used Hu Dark & Salty) into 6 small pieces as toppings for each individual muffin
Directions:
1) Mix all dry ingredients together, sift
2) Mix all wet ingredients together, whisk
3) Combine wet + dry ingredients and chocolate chips
4) Lightly oil muffin tin
5) Pour mixture into muffin tin, putting one small piece of chocolate as topping for each muffin
6) Bake for 30 minutes
