Lasagna Soup! From the words of my family: "Slingshot this to the top of the list." I had to try this after seeing @macy.blackwell make a version of it, and have decided this is THE hit comfort meal of the season. There are tons of recipes on Pinterest, but I decided to try the one from @cookingclassy. Below are my adaptations from her delicious recipe! Ingredients: 2 Tbsp olive oil, divided 2 lbs lean ground beef (or 1 beef, 1 sausage) 1 diced yellow onion 3 cloves minced garlic 4 1/2 cups low sodium chicken broth (+ extra if need to thin out) 1 (14.5 oz) can diced tomatoes 1 (14.5 oz) can crushed tomatoes 2 1/2 Tbsp tomato paste 1 1/2 ts basil 1 ts oregano 1/2 ts rosemary 1/2 ts thyme Salt and pepper to taste 8 lasagna noodles broken up (we used Gluten Free) 1 1/4 cups mozzarella 1/2 cup Parmesan 8 oz ricotta cheese 2 Tbsp parsley Directions: Heat 1 Tbsp olive oil in pit over medium heat. Brown ground beef, season with salt and pepper, drain and set aside. Heat remaining oil and add onion and cook for 4 mins, then add garlic and cook another 30 seconds. Add chicken broth, diced tomatoes, crushed tomatoes, tomato paste, basil, oregano, rosemary, thyme, ground beef, and season with salt and pepper. Bring to a boil, add in lasagna noodles, then reduce heat to medium-low, cover, and simmer for 20 minutes. In a bowl, mix mozzarella, parmesan, ricotta and a little parsley. Ladle soup into bowl, dollop with cheese mixture and watch that ooey goodness melt into the soup. Enjoy!! #lasangasoup #soupnight #easydinner #weeknightdinner #easydinnerideas
