I tried the Smashed Cucumbers recipe from the NY Times and made some minor tweaks! First, I didn’t salt the cucumbers to draw out the liquid. Instead, I followed one of the commenter’s suggestions and left the cucumbers flesh side up in the fridge for an hour to let the moisture evaporate. Easy peasy! I also did not add any olive oil. 🤔 And if you’re using table salt, which is smaller than kosher salt, be sure to use less or it will be too salty! Lastly, remember to use TOASTED sesame oil (dark in color) because it has a different flavor profile than regular sesame oil. Ingredients: 1 tsp kosher salt 2 tsp sugar 11⁄2 tbsp rice vinegar 2 tsp toasted sesame oil 2 tsp soy sauce 2 large garlic cloves, minced Red pepper flakes, to taste I hope you give this one a try!
