INGREDIENTS: 2 1⁄2 cups flour 1⁄3 cup uncooked millet 1⁄2 teaspoon salt 1⁄2 teaspoon baking powder 1⁄2 cup olive oil 1⁄2 cup water coarse salt, for sprinkling Optional garnishes: minced garlic cracked pepper fresh or dried herbs parmesan cheese poppy or sesame seeds DIRECTIONS: 1. Preheat the oven to 350oF. 2. In a medium bowl, combine the flour, millet, salt, and baking powder. Whisk to combine. 3. Add the olive oil and water to the bowl. Use your hands or a spoon to combine the ingredients together until a sticky dough forms. 4. Transfer the dough to a lightly floured counter. Using a rolling pin, roll the dough as thin as you can get it, about 1/8 inch. 5. Use a sharp knife or pizza cutter to cut the crackers into 1-2-inch squares or rectangles. For circles, use a glass or biscuit cutter. You can also try cookie cutters! 6. Use a metal spatula or knife to transfer the crackers onto baking sheets. Leave a little space in between the crackers, but they can be placed close together. 7. Gather up leftover dough scraps and repeat Steps 4-6. 8. Sprinkle the tops of the crackers with coarse salt and any optional toppings. 9. Bake each tray of crackers for 25-30 minutes, or until the crackers are golden brown on the edges.
