Put “eat cake” on top of your to-do list today and you’re sure to get at least one task done. 😜 I truly did enjoy the moment I could get my fork and dig into this this beauty I must say! Even my parents loved this one so here we are with my no bake double decker choc jaffa cake! 💫🍊☺️
Base:
▪︎ 1 cup almonds
▪︎ 1 cup walnuts
▪︎ 17 x large medjool pitted dates
▪︎ 2 TBS cocao powder
Choc-Jaffa Layer
▪︎ 1 cup coconut cream (chilled/thick part of can)
▪︎ 1 tsp vanilla
▪︎ 3/4 rice malt syrup
▪︎ 1/4 cup @macr0mike choc hazelnut
▪︎ 2 TBS cocoa powder
▪︎ 1 TBS orange zest
▪︎ 1/2 cup orange juice
▪︎1 1/2 cups cashews (soaked)
▪︎1/4 tsp himalayan salt
▪︎ 2 tbsp coconut oil, melted
▪︎100g dark chocolate melted
Orange layer
▪︎ 1 cup cashews
▪︎ 1/2 cup coconut cream
▪︎ 1/4 cup rice malt syrup
▪︎ Zest and juice of 2 oranges
▪︎ 2TBS coconut oil
▪︎ 1 tsp turmeric for colour
▪︎ 1 tsp vanilla
Topping:
▪︎ 100g dark chocolate ganache & 100g melted chocolate
▪︎ Dark chocolate shards/dried orange
METHOD:
1. Line the bottom of a 20cm round cake tin with baking paper.
2. For the base, process the nuts briefly and follow with remaining ingredients until the mixture starts to come together when pressed. Spread the mixture evenly across your lined tin, then place in the fridge while you make your filling.
3. Choc Jaffa Layer: Melt your chocolate slowly until fully melted and allow to cool slightly. Drain your cashews & place all remaining filling ingredients into a food processor & blend until smooth (approx 3-5 minutes). Once mixture is smooth, add your melted chocolate and mix again until combined. Pour the mixture over the base, even out, then place back into the freezer to set.
4. For the orange layer, place all the ingredients into a high-speed blender & blend until smooth. Once smooth; transfer the mixture on top of the choc jaffa layer. Place back in the freezer to set for 4 hours.
5. Once set, carefully remove from your springform tin and set aside. Melt your chocolate and drizzle directly over the top of the cake. Top with piped chocolate ganache, dark chocolate, dried orange slices & chocolate orange bark.
6. Allow to thaw for 20 minutes before serving.
