For us, the single easiest way to preserve our waterways in coffee production is to avoid them altogether. Washed coffees can contaminate upwards of 40L of water for every kilo of processed coffee. That contaminated water chokes out life in streams and in soils. In the #SNSM, where we work, we’re grateful for ideal sun drying conditions. We’d be foolish not to let Mother Nature take the lead on processing and embrace what she gives us. Cold nights and hot, breezy days enable a slow drying process that gives our fruit their signature characteristics.
