Summer fruits 🤝 Summer grilling Take your burger to another level with this juicy grilled peach burger 😋 @lettuce.thrive INGREDIENTS: 2 tbsp olive oil 1 ripe yellow peach 1 red onion, sliced into 1⁄4 inch rings 2 Beyond Beef Burger Patties 2 slices plant-based smoked gouda 1 pack of burger buns 1⁄4 cup fresh basil 2 Tbsp Balsamic glaze 2 Tbsp plant-based mayonnaise 1 Tbsp plant-based pesto Salt and pepper to taste PREPARATION: 1. Start by heating the grill to medium high heat. Prepare your produce by cutting the peach and red onion into thick slices (roughly 1⁄4 inch). 2. Prep your ingredients for the grill by drizzling the peach and red onion with 2 Tbsp olive oil. Season the red onion and Beyond Burger Patties with salt and pepper. 3. Add your red onion and peach slices to a grill. Let cook for 2–3 minutes then add the Beyond Burger patties and cook for an additional 3 minutes. Flip the Peaches, onions, and Beyond Burgers. Add 1 slice of plant based smoked gouda to the top of each Beyond patty, close the grill and cook for 3 more minutes. 4. While the burgers are cooking, prepare the pesto aioli by mixing the plant based mayonnaise and pesto in a small bowl. 5. Drizzle the cut sides of the buns with a little olive oil and let toast on the grill for a minute or until toasted to your liking. 6. To assemble the burgers divide the aioli among all 4 bun halves. Top the bottom bun with the burger, grilled red onion, grilled peach, a drizzle of balsamic glaze and a few pieces of fresh basil. Enjoy!
