Want to stay a step ahead of your busy day? Two words: meal prep. Make mornings easy delicious egg bites crafted (in advance) with your KitchenAid® Blender. EGG BITES RECIPE: For egg mixture: 6 large eggs 1⁄2 cup cottage cheese 1⁄2 cup grated gruyere cheese 1⁄4 teaspoon kosher salt Flavor options: Sautéed, thinly sliced shiitake mushrooms with soy sauce Finely diced jarred roasted red bell peppers Minced chives Sliced scallions Finely chopped sautéed broccoli Small cubed ham Plain 1) Preheat oven to 325 F. Bring a kettle of water to a boil. 2) In a KitchenAid K400 blender, combine eggs, cottage cheese, gruyere cheese, and salt. Blend for 20 seconds or until smooth. 3) Spray a mini muffin tin generously with a nonstick spray. This will keep the egg bites from sticking to the plan. Place the pan inside a half sheet tray or baking tray. 4) Add the desired fillings to each muffin cup. Pour egg mixture directly from the blender into each muffin cup until it reaches the rim. 5)Transfer the baking tray and muffin pan to the oven. Working quickly, carefully pour the boiling water in the baking pan until it goes about half way up the pan. Shut the oven door and do not open when baking. 6) Bake for 18-22 minutes or until egg bites are just set. Carefully remove the tray from the oven and remove egg bites from the pan to let cool. Wait until water has cooled to move the water-filled sheet tray.
