Recreating a special dish for one of our special clients @aveckarim.prive , the Signature Potato-Scaled Red Mullet of Paul Bocuse. We got to know of his love for this dish when eating at the epitome 3 Michelin Starred restaurant of Paul Bocuse, so we decided to surprise him with an exact recreation of the dish, even serving it on the actual plate from there.
