Grab your spoon, crack through the burnt-sugar topping and scoop up a generous amount of that creamy custard. ⠀ 2 1/3 cups heavy cream, 1 vanilla bean, 1/3 cup plus 6 tsp granulated sugar, 4 large egg yolks, pinch of salt. ⠀ 1.Preheat the oven to 300°F. Cut vanilla bean in half and scrape the seeds out. Add heavy cream, vanilla bean seeds, and pod to small saucepan. Heat over medium-high heat, stirring frequently. 2. Whisk egg yolks and 1/3 cup sugar in bowl, slowly add hot cream mixture. Add salt. Whisk until thoroughly combined. 3.Pour the custard into ramekins. Place them in a deep roasting pan, and fill the pan with the boiling water until it reaches 2/3 of the height of the ramekins. 4.Bake until custard is set but still jiggles in center, about 40 minutes. Remove from oven and allow to cool to room temperature. 5. Once cool, cover ramekins in plastic and refrigerate until set, at least 4 hours. 6. To serve, sprinkle each ramekin with 1 teaspoon sugar.
