Should you chill your cookie dough? Well, the answer to that depends on what you’re looking for! Generally speaking, it’s best to chill your dough for at least 30 minutes to allow time for the dough to relax and the butter to re-solidify, giving you a thicker cookie than what you would get if you baked right away. The longer you chill your dough, the thicker cookie you’re going to get. When you chill your cookie dough, you give the flour time to absorb the moisture in your dough and time for all of the flavors to get to know each other. This also allows time for the starches in flour to start breaking down into sugar leaving you with thicker, more flavorful & slightly sweeter cookies. Really, there’s no *right* way to have a cookie (but definitely follow what your recipe recommends!)
