VEGGIE FRITTATA 🍅🥚🥬 This veggie frittata is perfectly balanced with sweet caramelised onions, spinach, peas, juicy tomatoes, and sharp feta cheese. Ad. It’s a comforting veggie dish that's easy to whip up and affordable too, perfect for a healthy midweek supper. Eggs are one of nature’s most nutrient-dense foods 🤩 naturally rich in protein, vitamin B2, B12 and vitamin D and go a long way at mealtimes. Serves 8
🛒YOU’LL NEED
✔️9 British Lion eggs
✔️60ml of single cream (or substitute)
✔️1 red onion
✔️Handful of spinach
✔️1 tsp of honey
✔️140g of peas
✔️200g mixed colour cherry tomatoes
✔️1/4 block of feta for topping
✔️2 thyme sprigs
✔️Salt and pepper
✔️Coriander or parsley for topping
👩🏼🍳RECIPE
1️⃣Preheat the oven to 180C. Grease a pie dish with olive oil (you can always use your same pan if it’s oven safe)
2️⃣Slice onions thinly and fry in a pan with olive oil until they start to caramelise, at this point you can add a drizzle of honey or a sprinkle of sugar to help caramelisation. Add spinach until wilted and set aside.
3️⃣ Crack and beat eggs, add salt and pepper to taste and single cream until well combined. Add peas, spinach and caramelised onions and pour over the baking dish (if using the pan just pour egg and peas mix over the pan you fried onions and spinach)
4️⃣ Bake for about 30 min until golden on the top.
5️⃣ Finish with crumbled feta and herbs.
