An oldie but a goodie; aka easy sweet potato brownies and one of my favourite shots where I remember holding the camera in one hand and the spoon with the other. Life before a tripod 😆🙈 I remember sitting on the floor taking this photo and being so proud for being able to master shutter speed and continuous shooting. Your daily reminder to appreciate the little things💫💛 Healthier Sweet Potato Brownies INGREDIENTS: ▪︎1 cup cooked sweet potato ▪︎ 1⁄2 cup cocao powder ▪︎ 1⁄2 cup maple syrup ▪︎ 1⁄4 cup @macr0mike choc hazelnut protein⠀ ▪︎ 1⁄2 cup peanut butter ▪︎1.5 tsp baking powder ▪︎ 1⁄4 cup oat flour ▪︎ 1⁄2 cup chocolate chips ▪︎ 1 tsp vanilla & a pinch salt METHOD: 1️⃣ Preheat your oven to 180 degrees and line a square cake pan with baking paper. 2️⃣ Blend all the ingredients apart from the chocolate chips. In a bowl or food processor until a thick batter consistency is achieved. (Add a little more maple syrup if you have a big sweet tooth). Fold through chocolate chips and transfer to your lined tin. Smooth the top and decorate with extra chocolate. 3️⃣ Cook the brownies in the oven for approximately 25-30 minutes or until a toothpick inserted comes out mostly clean. ENJOY!
