Our process goes against the grain. We buy cherry directly from our partner-farmers. La Sierra Nevada de Santa Marta is a challenging region for travel and logistics. As such, most farmers sell their dried coffee to their nearest cooperative (which can be upwards of two hours on donkey away!) This puts the onus on the farmer to pick, process and dry the beans before they're even sold at a commodity price. Sometimes it's a fair price, often not, considering the amunt of work involved. Our methodology involves buying ripe fruit directly from our partners. At a significantly higher price.
