Peanut Butter Cheesecake is a smooth and creamy cheesecake made with peanut butter and a homemade cookie crust, topped with chocolate ganache and peanut butter cups. ⠀ For crust: 2.6 oz( 75g) butter, 1oz(30g) sugar, 1 oz (30g) sugar powder, 0.6 oz (18g) egg yolk, 1oz(30g) almond flour, 4.8oz( 135g) flour, pinch of salt, 1oz (30g) melted butter For cheesecake: 32 oz (907 grams) cream cheese, 1 cup (270 grams) creamy peanut butter, 1/2 cup (113 grams) sour cream, 1 1/4 cups (250 grams) granulated sugar, 4 large eggs plus 1 egg yolk, at room temperature. For chocolate ganache: 2.8 oz (80g) dark chocolate (60-70%), 1/2 cup(120g)cup heavy cream ⠀ 1.Sift together all-purpose flour. Beat room temperature butter with sugar and powdered sugar. Add egg yolk and flours. Roll the dough into a disc. Let it rest in the fridge for 2 hours. Break the disc into smaller pieces on a baking tray lined with parchment paper. Bake for 20 minutes at 375'F until golden. Cool completely. 2. In a food processor, combine the crust crumbles until finely ground. Add melted butter and pulse until the mixture is moistened. Press firmly into the bottom of the pan. 3. Use an electric mixer to beat room temperature cream cheese until completely smooth. Add the peanut butter, sour cream, sugar, and beat until combined. Add the eggs one at a time, and beat until just combined. 4. Pour the batter into the prepared pan. Place the pan in a larger roasting pan. Pour boiling water into the roasting pan until the water is about halfway up the sides of the cheesecake pan. Bake at 325°F for 1 hour, until top looks dry but in the center it is slightly wobbly. Turn off the oven and open the oven door slightly. Let the cheesecake cool inside the oven. Refrigerate for 6 hours. 5. Bring the heavy cream just to the boil, then pour it over the chocolate. Allow to stand for 2-3 minutes, then stir together until smooth and glossy. Top cheesecake with chocolate ganache and peanut butter cups.
