We only purchase whole cherry. Though there can be many headaches involved, we believe it’s the best process for our partner-farmers and the region. Our processing facility is on the Santa Marta coast, a good four hours (on a good day) from most of the farmers we work with. Drawing the rainy months this can be a day-long trek. As such, we plan accordingly: we ferment in tanks during the transport down the mountains at ambient temperatures. We believe that this process highlights the wild nature of the region and creates something special. Purchasing whole cherry also allows our partners to free up labour and production tasks on their end: no need to pulp, wash and dry the beans. Simply pick the cherry and send it off.
