At its core, Gold Standard is built on what co-creator @billspector calls a “highbrow, low-brow approach”—the highest level of quality delivered in a relaxed, intimate setting. “It’s highest-end food in a comfortable state,” Spector says. “The servers and chefs become friends and family throughout the meal.”
The new Sunset Harbour location was a natural fit for that philosophy, offering what he describes as a neighborhood that’s “busy but relaxed, not overcrowded with tourists, and full of great neighbors.”
The experience begins with an unassuming alleyway entrance that opens into a private dining room where guests can expect a “world-class meal and a fun ethos,” according to Spector. The space itself marks a shift from past iterations, with more independence and room to move, creating a smoother, more personal flow for guests.
Gold Standard’s reputation for pristine ingredients remains central, with most of its fish sourced directly from Tokyo’s Toyosu Market, alongside specialty ingredients from Japan, Spain, and beyond. While the omakase bar is the main event, guests can also opt for a smaller à la carte menu at surrounding lounge tables, featuring nigiri, hand rolls, and drinks—perfect for those who want a taste of the experience without committing to the full omakase journey.
