Hanger Steak from @tinbuilding topped with a Spiced Pumpkin Bone Marrow Butter. This with some sweet potato fries could potentially be my dream streak frites situation 🎃🥩🧈
Chili Spiced Bone Marrow Butter:
- 1/2 cup (1 stick) softened butter, I like to use an unsalted cultured butter like @vermontcreamery
- 1 beef bone marrow, soaked overnight in cold water to remove impurities
- 2.5 tbs. unsweetened canned pumpkin puree
- 1/2 tsp. chili powder, 1/4 tsp. paprika, scant 1/4 tsp. each cinnamon and cayenne (more spice to taste if wanted)
- 1/2 tsp. brown sugar
- salt to taste
Roast the bone marrow at 400 F until the center is completely soft and the bone marrow has melted into liquid. Once cooled slightly, scrape the inside and all melted marrow out and strain to reserve just the clear melted marrow.
Whip all ingredients together until combined & creamy.
Serve over steak, or on toast/with bread, or even on a baked sweet potato, or however your heart likes to use butter
