Another dish to encapsulate summer: A fresh herb + floral yogurt sauce inspired by the many iterations of cultured yogurt + herb combinations such as Raita, Tzatziki, and Mast o khiar.
Dip veggies in it, use it as a dressing, eat it on pita with sliced cucumbers, radishes, carrots, greens, and smoky sumac mushrooms.
Ingredients:
1 1⁄2 cups of thick cultured yogurt (I use @cocojune_organic )
1⁄2 cup mixed fresh herbs, chopped finely (I like to use a combination of dill, mint, chives, and parsley)
3 garlic cloves, grated or finely chopped
Lemon zest from 1⁄2 lemon
Juice from 1⁄2 lemon
Salt + pepper to taste
1⁄4 cup florals (I like to use dried roses + fresh violas)
1 tbsp olive oil for drizzling
Flaky salt to finish
Directions:
Place the yogurt + herbs in a bowl and mix well.
Add in the grated garlic, lemon zest, lemon juice, salt, and pepper and mix well.
Drizzle with olive oil and top with flowers + flaky salt.
