This is a super easy, budget friendly, beginner friendly, perfect every time side dish. Just a few ingredients and preps in less than 20 minutes. Ingredients: 2 lbs Yukon Gold potatoes, scrubbed, sliced thin 1 Boursin, Garlic & Herb 1 cup heavy whipping cream 1 cup half & half Fresh black pepper Kisher salt Optional: fresh grated Parmigiano Reggiano or gruyere In a heavy bottomed sauce pan add cream, half & half, Boursin, generous fresh cracked pepper and pinch of salt. Let that come yo low boil and wisk to combine Boursin and until smooth. To a lightly oiled 13x9 pan, spoon in a little of the cream mixture evenly. Add an even layer of potatoes, sprinkle generously with salt, then drizzle a later if cream. Repeat steps until all potatoes are added. Pour remaining cream mixture over the top and spread evenly. Add more cracked pepper and fresh grated cheese (optional). Bake at 400 degress for 40- 45 minutes or golden on top.
