Lucky to attend an awesome collab dinner @kinn.la x @kalirestaurant last week. @kalichefkevin made various kinds of kimchi with varying fermentation times (from 24 hrs to 2 weeks) and it was just as delicious as kimchi made by aunties in traditional ktown spots. I sat at the counter and observed their synergy as they built each dish with focus and patience. Murmurs of “ooohs and aaahs” echoed around me after diners began tasting each course.
