Avocado Banana Bread: * 1 large or 2 small avocados (1⁄2 cup mashed) * 3⁄4 cup @lakanto monkfruit sweetener * 2 overripe bananas * 2 large eggs or 2 flax eggs * 6 tbsp milk of choice * 1 tsp apple cider vinegar * 1 tsp baking soda * 2 cups sifted all-purpose flour or 1 to 1 gluten free flour * 1⁄2 cup mini chocolate chips, I used cacao chips from #traderjoes Instructions: * Preheat oven to 375°F. Spray a loaf pan with cooking spray or 10 mini loaf spots or 12-15 muffin cups. * Place avocados and bananas in a blender and blend until smooth. Transfer to a large bowl. Add monkfruit sweetener to the bowl and mix until well blended. * Stir eggs, milk, ACV, and baking soda into the banana mixture. Add flour and mix until just combined. Stir in chocolate chips. * Pour into prepared pan. Top with additional chocolate chips (if desired) and bake about 40-50 minutes for a large loaf and 20-30 minutes for the minis, until it's browned on the top and a toothpick comes out only with crumbs. * Remove from the oven and let cool #WhatRobinEats #avocadodessert #avocadobread
