LITTLE FANCY FOCACCIA BITES 🍅🍞 Made these for my mum’s 60th birthday the other week and because a few people wanted to know what I did for these, I’m sharing below.
I baked my focaccia recipe (recipe on my website and higlights) and once cooked, cut it up into small but sized rectangles.
Also if you wanted to keep this simple to make, you could just buy a nice baguette and slice that up too.
I then made two topping flavours to go onto top of the focaccia. Essentially you need some form of spread to go onto the focaccia so the rest of the toppings can stick.
Smashed pea, mint and mozzarella topping
For the smashed pea mixture, I just blitzed some thawed frozen peas, oil, @meredithdairy goat’s cheese, lemon zest and juice and a whole bunch of herbs (mainly mint, basil, oregano) until it forms a smooth-ish spread. Spread that onto the focaccia, topped with a small slice of mozzarella, a few thawed peas and a mint leaf.
Ricotta, tomato, onion, basil and @chillioiloneverything
For this one, I just spread smooth ricotta into the focaccia as the bottom layer. For the topping, I combined halved baby tomatoes and tomberries, chopped basil and finely sliced red onion in a bowl with olive oil, salt and pepper and let that marinate for a few minutes, before placing spoonfuls onto top of the ricotta spread and then finishing with a drizzle of @chillioiloneverything.
