Ahead of the long weekend we dropped in #AtHomeWithTish again for another special Summer recipe, that you can cook at home, inspired by the flavours of Cubitt House. Grilled Lemon Sole, Datterini Tomatoes, Sorrel Butter and Sea Herbs Serves 4 4 medium Lemon Sole (500-600g) trimmed and gutted 150g Datterini Tomatoes, halved 150g softened Unsalted Butter A handful or fresh Sorrel Leaves finely chopped 150g fresh sea herbs - such as Samphire, Sea Lettuce, Purslane Sea Salt, Black Pepper and Extra Virgin Olive Oil Lemon Juice Mix the softened butter with the seasoning and the sorrel and reserve for later. Heat a wood oven to 300 degrees centigrade. Oil a baking tray and place the sole on the tray, season and rub with the butter. Divide the tomatoes on top and bake for 8-9 minutes until the fish is just cooked through and the tomatoes are releasing their juices. Now top the fish with the sea herbs and bake for a further two minutes. Squeeze over some lemon and serve! Enjoy and keep your eyes peeled for more from #AtHomeWithTish #CubittHouse
