APPLE BUTTER
Yield: 4 cups
2 lbs. Granny smith apples
1 cup apple cider vinegar
3 cups water
2 cup sugar
1 tsp ground cinnamon
1⁄4 tsp ground cloves
1⁄4 tsp ground all spice
1⁄4 tsp kosher salt
1 lemon, zested
1. Quarter the apples and place in a pot with the vinegar and water. Cover the pot, bring the mixture to a boil and cook for 15-20 minutes, or until the apples are very soft.
2. Spoon the apples into a food mill set over a pot and process the apples then strain the poaching liquid into the pot with the apple sauce.
3. Add the sugar and seasonings to the mixture and cook over low heat until mixture thickens and turns a deep dark brown color.
