Mini Lemon Flower Tarts 🍋 These tart are the perfect Spring treat. So simple the kids will love baking and decorating them with you. This recipe is the perfect balance of sweet and sour. Save this recipe if you LOVE dessert 🌼 INGREDIENTS * 1 unbaked pie crusts * 1 cup lemon curd * Powdered sugar, optional Lemon Curd: * 1 tbsp lemon, zest * 1 1/2 cups lemon juice, fresh-squeezed * 4 tbsp vegan butter * 1/8 tsp turmeric or 2-3 drops yellow food coloring * 6 tbsp cornstarch or arrowroot * 1/2 cup powdered sugar DIRECTIONS 1. In a small saucepan over medium heat, melt vegan butter. 2. Once melted, remove it from the heat and mix it with the arrowroot until a paste is formed. 3. Return the pan to medium heat and add in the sugar, lemon juice, lemon zest, and turmeric if using. Stir until the sugar dissolves and the vegan lemon curd thickens. This should take about 5-10 minutes to fully thicken. 4. Remove the lemon curd from the heat and let cool. It will begin to thicken while you work on the pie. 5. Preheat oven to 395 degrees. Spray mini muffin pans with cooking spray that has flour in it. Set aside 6. Set your pie crust out to became room temperature 7. Roll it out and cut flower shapes out of it with flower cookie cutter 8. Cut out as many flowers as possible 9. Re-roll the scraps and cut more flowers, you should be able to get 12-14 flower shaped dough pieces 10. Put the pie flower in mini muffin tins, leaving an empty space between pies 11. Press them into bottom well and gently fold the petals back around the top of the muffin pan 12. Prick the bottoms with a fork 13. Bake cookie tarts for about 8-10 minutes or until golden around the edges 14. Let cool and remove from the pans carefully. 15. Sprinkle with powdered sugar then fill with a few teaspoons lemon curd.
