In the distance, the mountains from which these beans came. Our central drying beds are about four hours away from most of our partner-farmers, but it provides us with the ideal climate for slow sun drying of the fermented cherry. Hot, sunny days make for a slow and even ripening while the cool, breezy nights prevent mildew developing. In about two week's time, the once-plump cherries will be dessicated, hard and placed in the shade to mellow before being exported.
