Imo pop-ups are truly one of the most fun ways to dine out in NYC right now. It’s been so exciting to see the power shift to allow for more small business owners who may never have thought they’d been running their own kitchens to be able to launch pop-ups on their own terms. Pop-ups are also a shit ton of work for the workers operating them, often with brutal margins (shout out to all the women who let me learn from them and pick up catering shift gigs, a few years back).
