This is my take on southern tomato pie! Let’s just say I will be adding this to my summer menu for years to come 🍅🥧 Tomato pie: ✨1 store bought pie crust ✨4-5 tomatoes ✨6 oz cheddar cheese ✨1/2 cup mayo ✨1/2 sour cream ✨1/4 teaspoon garlic powder ✨1/4 teaspoon of chives ✨1 Tablespoon minced chipotle peppers (use jalapeños to make it spicy) ✨caramelized onions ✨salt and pepper to taste ✨2 Tablespoons whole grain mustard Caramelized onions: ✨1 sweet yellow onion ✨1 Tablespoon evoo ✨1 Tablespoon of butter ✨1 teaspoon sugar ✨pinch of salt 1. Preheat your oven to 350°F. 2. Add your pie crust to a baking dish, pressing the edges against the dish. Use a fork to prick the bottom so steam can escape. Par bake the crust for 10 minutes. 3. Slice your tomatoes and place them on a paper towel. Season well with salt and let them drain as much liquid as possible. Set them aside. 4. Put your pan on medium heat and add 2 tablespoons of extra-virgin olive oil and 1 tablespoon of butter. Add your sliced onions with a little sprinkle of sugar and let them caramelize. This will take about 20 minutes. Keep an eye on them to prevent burning and add a pinch of salt at the very end. 5. In a bowl, combine your cheddar cheese, mayo, sour cream, garlic powder, chives, chipotle peppers, salt, pepper, and caramelized onions. Mix well. 6. Add your ground mustard to the bottom of the pie dish, then add a thin layer of shredded cheddar cheese. Layer your tomatoes on top, add some fresh chives or green onions if you have them, then add your cheese mixture. 7. Pop the pie back in the oven and bake for 25 minutes.
