Brown Butter & Sage Mac and Cheese 🧀 🍂🤎 On day 5 of Everything but the Turkey, I give you the perfect creamy, cheesy, and flavorful side dish to elevate your Thanksgiving table. What you’ll need - 1 lb pasta 5 cups cheese (I used gouda, white cheddar, and parmesan) 4 tbsp butter 5-6 sage leaves 1-2 garlic cloves (minced) 1/2 tsp red pepper flakes Salt and pepper (to taste) 4 tbsp flour 3 cups half and half Directions: 1. Cook your pasta according to package instructions, then drain and set aside. In a large saucepan, melt butter over medium heat until browned and fragrant. Add sage leaves, garlic, and red pepper flakes, and let them infuse for 1-2 minutes. 2. Whisk in flour to form a roux, cooking for 1 minute. Slowly pour in half and half, whisking constantly, until smooth and thickened. 3. Stir in 2 cups of your cheese blend, reserving the rest for topping. Mix until melted and creamy. Season with salt and pepper to taste. 4. Combine pasta with the cheese sauce and mix well. 5. Layer half the pasta in a greased baking dish, sprinkle with half of the reserved cheese, then repeat with the remaining pasta and cheese. 5.
