The secret to Greek cooking is beautiful, fresh, unprocessed ingredients kept simple. I think that’s part of what helps them live longer than Americans. That and how much they walk and swim and interact with other people. It’s a different pace of life. A Greek salad has such few ingredients - olives, cucumbers, tomatoes, peppers, feta, olive oil and oregano. No frills. You are meant to taste each of the vegetables. Greek white wine -which we don’t see much in the US - is crisp and minerally. And what can I tell you about a humble dish of Greek steamed mussels? Not sure, but I think the yellow color comes from putting mustard in the sauce. It is soooo good!!! I could eat this every day. I plan to ask @chefsymon to pretty please teach me how to make them.
