Like most entrepreneurs, John started his business during Covid. After years of culinary education and stints at classically-trained institutions, he suddenly found himself with lots of time to focus on developing his food and beverage concept, first in his basement for his day one customers, and now in a cozy converted recording studio located in Atwater Village. As you walk in, there are remnants of its former tenants as Beastie Boys paraphernalia adorn the walls. An adjacent cavernous basketball court holds dance classes during the week and is a highly sought out set for TV and movies. Around the corner is John's beautiful wooden bar with an eclectic collection of spirits, cups and dishes foraged from thrift shops and estate sales, as well an efficient use of induction burners, freezers, and other appliances that allows him to prepare 14-18 courses. Pricing is roughly $10/course and we had 15 courses. In terms of ambiance, this cozy speakeasy would easily belong on Diagon Alley or in the basement labyrinth of the Magic Castle. You'll want to come with a group of 4-6...any more than that and it gets a wee bit crowded. A week before you arrive, he will gauge your appetite to determine the number of courses as well as what spirit to begin and end the journey with. We chose chartreuse and this level of customization only enhances the experience. For 2 hours, we watched with anticipation as each pairing appeared in front of us like magic. Colors, flavor profiles and textures were super creative and just when you think "nah, this one sounds too weird and won't work...." you find yourself pleasantly surprised until you just approach the upcoming courses with an open mind.
