Esquites—or, “Corn in a Cup,’’ as our family lovingly called it growing up—is a delicious and flavorful snack, side, and party treat that we love making (and eating)! ⁠ ⁠ INGREDIENTS⁠ 4 ears of Corn, husks removed⁠ 1 cup Siete Kettle Cooked Fuego Potato Chips⁠ 2 Tbsp Vegan Butter⁠ 2 Tbsp Vegan Mayo⁠ 1⁄2 tsp Sea Salt⁠ 1⁄4 tsp Chili Powder⁠ Vegan Feta Cheese, as needed⁠ Siete Traditional Botana Sauce, as needed⁠ ⁠ DIRECTIONS⁠ 1. Cook corn in boiling salted water for 5 minutes and set aside to cool.⁠ 2. Transfer fuego potato chips to a plastic bag and crush until fine crumbs form.⁠ 3. Cut corn kernels off of the corn cobs and mix with melted butter and vegan mayo. Season with sea salt and chili powder.⁠ 4. In a clear glass cup, layer corn, Traditional Botana sauce, vegan feta, and repeat all once until you have two layers of each.⁠ 5. Finish the esquites with the crushed fuego potato chips.
