I love scalloped edge of Delicata Squash
Delicata Squash Galette
Pre bake sliced squash and shallot seasoned with salt, pepper and olive oil at 425f for 20mins (cooking only halfway)
Make the dough
11⁄2 cups whole wheat flour
2 tablespoons granulated sugar
Pinch of Kosher salt and black pepper
1⁄2 cup unsalted butter (1 stick), cut into 1⁄2-inch cubes
11⁄3 cups/ 4 ounces grated Gruyère
1⁄4 cup ice water
Always keep the dough cold
When squash cools to room temp
Roll out the dough
Add gruyère slices
Add baked sliced shallots
Add baked Delicata squash
Add thinly sliced butter
Fold over edges of the dough
Brush egg yoke on the folded over dough
Bake 30mins at 425F
