THE PERFECT COZY WINTER DINNER✨ Ingredients: - 3 acorn squash - 1 lb ground beef or turkey - 3/4 cup quinoa - 1 1/2 cup bone broth - 1 onion, chopped - 4 stalks celery, chopped - 1 apple, chopped - 1 package of mushrooms, chopped - 1/2 cup cranberries - 3 cloves garlic - 1/4 cup each: fresh thyme and sage, chopped - 1/2 tsp cinnamon - Salt and pep Instructions: 1. Cut a thin slice off the bottom of each squash to create a flat edge, so the squash can stand up then cut each in half. Scoop out the seeds. Drizzle avocado oil, season with salt & pep, and roast in oven until soft (I broiled at 500 for approx 20 minutes, flipping half way) 2. Cook quinoa with bone broth according to package directions 3. In a large pan, cook beef and add veggies, cranberries and spices. Cook until veggies are soft. Once both quinoa and beef mixture are cooked, combine the two. 4. Add stuffing to the inside of squash and broil for a few minutes until brown.
