Next Friday, we’re setting the table underneath the Paradise Island Lighthouse in The Bahamas — the oldest surviving lighthouse in the West Indies. This hard-to-reach remote beach is scattered with conch shells set against sparkling Caribbean waters, with the skyline of Nassau springing up in the background. Chef Simeon Hall Jr. will wow us with a banquet of local seafood layered with Caribbean flavors, but he’ll have some stiff competition from the sunset over the water behind the lighthouse, which is sure to put on a show of its own.
