Found a new salad obsession. Shaved Broccolini, Brussels Sprout And Kale Salad: adapted from @rachlmansfield + @dishingouthealth INGREDIENTS For the avocado cream: [Alternatively, you can just use avocado] 1/2 ripe avocado ๐Ÿฅ‘ 1/2 cup fresh cilantro leaves ๐ŸŒฟ 1/4 cup plain Greek yogurt [I used 0% @fage] 3 tbsp lime juice 1/4 tsp salt๐Ÿง‚ 3 cups shredded kale ๐Ÿฅฌ 3 cups shaved Brussels sprouts 2 cups broccolini, chopped ๐Ÿฅฆ 3 cloves garlic, minced ๐Ÿง„ 1/4 cup parmesan cheese, shaved or grated 1/3 cup pumpkin seeds 1/4 cup raisins 2โ€“3 soft boiled eggs ๐Ÿฅš Scoop of hummus Fresh lemon ๐Ÿ‹ Extra virgin olive oil for dressing 1. Prepare avocado cream by combining all ingredients in a blender or food processor; blend on high until smooth. Set aside. 2. Massage kale with a drizzle of oil and a sprinkle of salt and set aside. 3. Add the Brussels sprouts, broccolini, and garlic to a large oiled skillet and cook on medium heat for ~7-10 minutes or until softened. Add salt and pepper while cooking and stir often. 4. Remove from heat and add to a large bowl with kale, cheese, pumpkin seeds and raisins. 5. Dress with fresh lemon juice and EVOO and toss well. Add a scoop of hummus and avocado cream. Top with your soft boiled egg, cut open, and serve. ๐Ÿ’ Enjoy!๐Ÿ’
